Gluten & Dairy Free Baking

Definitely one of the positive notes about being stuck at home these days is all of the time we have had to practice living gluten free. In fact, I've pretty much made it a part of our home school curriculum. Every week we bake something new & so far, everything we have made has been gluten & dairy free. We started with a recipe my mom gave us - they are a healthy version of a cookie:


We like to call them breakfast cookies because they are made with ripe bananas. Sadie & Bryan really liked these!

Next up, we tried more of a traditional cookie - peanut butter!



Sadie loves peanut butter so I knew this would be a good cookie. Bonus, she loved rolling the dough in sugar & pressing it with a fork:


We loved the peanut butter cookies & honestly, couldn't tell much of a difference than our old recipe. 


Can you tell we made these before Easter? Speaking of Easter, I may have already posted this, but Easter weekend we tried pancakes:


Don't you love those adorable pancake molds?! Even Bryan said he couldn't tell a difference with our pancakes so I think that's a good sign!

We also made egg nests using our jelly beans on Easter weekend:



They looked cute but I prefer our old recipe better. 

One morning we tried banana bread:


The 3 of them thought it was delicious & obviously it was because we wiped out the loaf! But I have been making banana bread for a long time because it is a favorite of mine & I did not like this at all. It was very dense & I didn't think the flavor was as good. I tried a new gluten free, dairy free recipe for this but next time, I think I am going to try to use my old recipe & modify. Fingers crossed it turns out better!

I have also let the girls pick a few treats to make also. They saw a recipe for popcorn balls made out of marshmallow cream:


These were super easy, but super yummy! I think we were fighting over who got to eat them. And it was an easy bake, especially since we usually have marshmallows & popcorn on hand & both are gluten free. 

Finally, Sadie wanted to try brownies:


I bought a mix for this but of course it was dark cocoa since she can't have milk & again, the texture was so different. We ate it, but I wasn't a fan so I will be trying something new for brownies next time. 

The good news is we are definitely getting more comfortable with our new baking lifestyle & we've had lots of time to practice. Let's see what else we can create in the kitchen?!
